So I'm a bit of a sucker for a pookie, but I haven't made one since my yummy scrummy Oreo Stuffed Cinnamon Pookies way back last December.
But these were definitely worth the wait.
I managed to get a little Dublin trip squeezed in when my sister visited and Fallon & Byrne was on the top of my must visit list. So when I stumbled upon it while getting ridiculously lost I was like a kid in a sweet shop.
And when I stumbled upon the Butterscotch chips I was in heaven and I had to take a bag home with me. So all in all it was a rather successful shopping trip I think.
I'm also on a bit of a cookie butter binge so I had to squeeze some of that into these pookies.
And they are fab, those butterscotch chips are frigging amazing and the cookie butter gives the pookie a rich caramel like flavour.
But if you can't get your hands on any cookie butter (I had to have a friend send me some but I've heard you can get it in Sainsburys) you can always experiments a little with various nut butters.

65g / 1/4 Cup Butter
50g / 1/4 Cup Cookie Butter
1 Tsp Vanilla Extract
200g / 1/2 Cup Plain Flour
100g / 3/4 Cup Butterscotch Chips
Lightly spray a muffin tin with an oil spray and preheat the oven to 170c
In a large mixing bowl beat together the butter, cookie butter and sugars until light and fluffy.
Beat the egg in well followed by the vanilla extract.
Gently fold in the plain flour followed by the butterscotch chips.
Fill each muffin whole 1/3 to 3/4 full with the cookie dough and then pop in the oven and bake for 15-20 minutes. Or until the edges are golden brown.
All the pookies to cool fully in the tin and then remove and enjoy once cool.
