Cookie Butter Cookie Bars with a Coffee Glaze
My sister and her family visited us for 10 days, leaving last monday but because we were so busy I didn't get half as much baking in as I thought I would. I really wanted to spoil them while they were here but the time just ran away with me.
So the night before they left I had to bake them something for them to nibble on their journey (a 1 hour car trip, 1 hour plane trip and a 6 hour bus journey home meant they were bound to get a tad hungry along the way) and since only the week before I'd been sent a pot of cookie butter I had to give that a shot as well.
So with a log journey it had to e something that could travel well, right? but I bake so many cookies I wanted to jazz it up a little. Yes I know pressing cookie dough into a pan isn't exactly a genius thought but it's a little different to singular cookies.
Also with my sister being a strong coffee addict I had to make sure she was going to get her caffeine hit on the journey as well, god forbid you cross my sister when she's tired (I love you really Fleur)
And so the Cookie Butter Cookie Bars with Coffee Glaze where born, that's a bit of a mouthful right there.
These cookie bars are firm and chewy with a lovely crispy edge. The cookie butter gives the cookies a rich caramel flavour and the strong coffee glaze cuts through the sweetness of the bars.
For such simple cookies they really a little bit of heaven. They're not particularly fancy to look at but sure we don't always need sugar and sprinkles type of bake to satisfy that sweet tooth.
These vanished in a matter of hours, to be honest my sister was lucky there were any left for her to take home with her.
Now I know next time they visit I'm going to have to allot actual time to bake for them, because visitors always equals more recipes for you guys!
For the Cookie Bars:
95g / 3/8 Cup Cookie Butter (I used Lotus Spready Creamy)
95g / 3/8 Cup Butter
175g 1 3/4 Cups Caster Sugar
25g / 1/4 Cup Light Brown Sugar
1 Tsp Vanilla
1/2 Tsp Baking Powder
1/4 Tsp Salt
190g / 3 Cups Plain Flour
For the Coffee Glaze:
2 tsp Instant Coffee Powder
2 Tbsp Water, Boiling
50g Icing/Confectioners Sugar
1-2 Tsp Coffee
1 Tbsp Milk
Preheat your oven to 325f/160c and line a medium sized baking tray with greaseproof paper.
In a small bowl mix together the boiling water and instant coffee powder and set aside for the coffee glaze later.
In a large mixing bowl beat together the butter, cookie butter and sugars till light and fluffy.
Then beat in the egg, followed by the vanilla.
Sift in the flour, salt and baking powder and fold in gently.
Then press the cookie dough into your prepared pan and bake in the oven for 15-20 minutes.
Once baked remove the tray from the oven and allow it to cool fully.
Once cool in another bowl mix together your icing sugar, 1-2 tsp of the coffee you made early (depending on how strong you want the coffee glaze). If it needs it you can add the milk.
Then drizzle liberally onto the large cookie tray.
Allow the glaze to set for 10 minutes then slice into preferred size cookie bars.
